☀️ Our Sheet Pan Mediterranean Style Chicken & Veggies with Tzatziki Sauce is a tasty dinner winner that’s ready in 30!⠀

Ingredients: •1 lb chicken breast or boneless thighs •3 bell peppers •1 red onion •2 lemons •3/4 tsp dried oregano •1/4 tsp each, dried basil, thyme, and garlic and onion powders •naan (flatbread) or rice •quick tzatziki sauce (1 1/2 cups plain Greek yogurt + 1 cup finely grated cucumber + 2 tbsp olive oil + 1 clove minced garlic + 1 tbsp fresh dill + juice of 1/2 lemon + salt and pepper, to taste) ⠀⠀⠀

Sauce: Grate cucumber and place between paper towels or cheesecloth to remove excess water. In a mixing bowl, combine cucumbers with remaining tzatziki ingredients and mix well. Chill in fridge as you prepare sheet pan. CHICKEN: Dice chicken and veggies into even 2” pieces. Drizzle with olive oil and season with herbs plus a pinch of salt and pepper. Place veggies on one end of a sheet pan, chicken on the other, with sliced lemons laid flat in the middle (note: you may need 2 pans to fit all ingredients). Bake at 350 for 20-25 mins, or until chicken is done and veggies are tender.⠀
