compstonkitchen is helping us keep things COZY (slippers essential) with big bowls of this Vegetable Farro Soup! A slight variation on a classic minestrone. Loaded with nutrient-rich vegetables and comforting flavor ☺️ this is just what the day called for. ⠀

* 2 tablespoon olive oil⠀
* 1 yellow onion, diced⠀
* 3 cloves garlic, minced⠀
* 3-4 carrots peeled and sliced into 2″ pieces⠀
* 2 celery stalks, sliced⠀
* 8 cups chicken or veggie broth⠀
* ½ lb fresh green beans sliced into 2″ pieces⠀
* 1 14 oz. can crushed tomatoes⠀
* 2 tbsp tomato paste (optional, but adds depth)⠀
* 1 15 oz can chickpeas or white beans rinsed and drained⠀
* 2 cups fresh spinach⠀
* 1 cup dry farro, barley, or favorite small pasta⠀
* ½ teaspoon each dried thyme and oregano⠀
* ¼ teaspoon dried basil⠀
* 1 bay leaf⠀
* ½ teaspoon salt⠀
* ½ teaspoon crushed black pepper⠀
* Heat olive oil in a large soup pot. Add garlic and onions and sauté for 4-5 minutes, or until onions are tender and transleucent. �⠀
* Add celery and carrots and sauté for another 2-3 minutes.�⠀
* Next, add green beans, tomatoes, paste (if using), broth, and remaining seasonings and bring to a simmer, stirring occassionally. �⠀
* Add farro and continue simmering until farro is fluffy and tender, roughly 20 minutes. �⠀
* Reduce heat and stir in spinach and beans, until tender is wilted. �⠀
* Remove bay leaf and serve up your soup! Garnish with shredded parmesan or asiago cheese if desired, and enjoy!⠀
